Ingredients
Muffins
- 1 cup all purpose flour
- 1/4 cup sugar
- 1 tsp baking powder
- 1/2 tsp kosher salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 cup milk
- 1 egg
- 1/4 cup (1/2 stick) butter, melted and cooled slightly
Cinnamon Sugar Coating
- 1/4 cup (1/2 stick) butter, melted
- 1/4 cup sugar
- 1 tsp cinnamon
Instructions
- Preheat the oven to 350 degrees F. Coat 6 of the muffin cups in a a standard size muffin tin with nonstick spray, or line with parchment.
- In a medium bowl, melt the butter. Then, combine with the milk and egg and whisk until smooth.
- Then, add in the flour, sugar, baking powder, salt, cinnamon, and nutmeg and whisk until just combined, taking care not to overmix.
- Evenly divide the batter between the muffin cups and bake until a toothpick comes out clean, about 25 to 30 minutes. Let the muffins cool to set for 5 minutes in the pan, then transfer them to a wire rack to cool until slightly warm. This will help the coating adhere.
- Pour the melted butter into a shallow dish, then combine the sugar and cinnamon in a second shallow dish. Working one at a time, roll the muffins in the melted butter, then in the cinnamon-sugar mixture. Repeat with remaining muffins, butter and sugar.
